Black lentils of Enna's hills are an ancient variety of lentils that until 6 years ago had virtually disappeared. Since 2003 our farm has been on a mission to save this fantastic product, although it is a difficult process as the cultivation is entirely done by hand and the plants produce tiny beans. In the end, the difficulties are justified by the extraordinary flavour of this lentil: it is very stout, aromatical and tasty, almost spicy. The color, fully black, is very special and unusual. This lentil is good in soups, as a condiment for pasta, or side dish for fish.
